Spicy Thai Noodles
I was introduced to Thai food about seven years ago. Before I tried Thai the only thing that came close was Chinese and after I had eaten a good Thai noodle dish I never wanted Chinese again. The mix of spicy, savory and sweet flavors were so perfect it instantly became my new favorite kind of food. I have been trying for years to find a decent Thai noodle recipe and have come up short until now. This recipe for spicy Thai noodles is so easy and its vegetarian, bonus! I originally found a similar recipe on Pinterest but I've altered it a bit.
1 box of linguine pasta
1-2 tablespoons of crushed red pepper
1/2 cup of sesame oil
Splash of olive oil
6 tablespoons of honey
6 tablespoons of soy sauce
1 bunch green onions
1 bunch cilantro
1 green pepper
1 red pepper
1 orange pepper
1/2 red onion
Chop green onions and cilantro and set aside.
Slice fresh peppers and red onion and set aside.
Boil Noodles and drain.
Heat olive oil, sesame oil and crushed red pepper over medium heat.
Strain out pepper and reserve oil.
To oil, whisk in honey and soy sauce.
Add mixture, cilantro and green onions to noodles and toss.
In pan stir fry fresh peppers and red onion, add to noodles and toss.
Enjoy! It's yummy warm or cold.
