Bradley Cooks: Spicy Black Bean Burgers & Home-Cut Fries
I've been a vegetarian now for about 3 or 4 years. Every once in a while someone asks me if I ever miss meat. Or they ask if I ever get cravings for "meat like" things. The simple answer is yes. The lengthier answer is absolutely not. I never crave a piece of chicken or a juicy steak. In fact those things don't even sound good anymore. But sometimes a big, fat, juicy burger and fries sounds REALLY good. Sometimes ravioli sounds incredible or a chicken strip. But really what I miss sometimes is comfort food. It has nothing to do with the meat. Gorgonzola, walnut and pesto ravioli or vegetable tempura takes the place of ravioli and chicken strips any day. A good portabella mushroom, eggplant patty or homemade bean burger tastes better to me now then any beef burger. Well, I'm in luck because my new spouse just happens to be hot and oh, well, he can cook too. He's not a vegetarian but he's really cool about eating mostly veggie when he's around me. We like to try and make mostly healthy things but just for good measure we like to boil things in canola oil too. Because YOLO, right?
Bradley's Spicy Black Bean Burgers
2 Cans Black Beans Drained and Rinsed
1 Red Pepper
2/3 C. Breadcrumbs
1/2 Red Onion
1 t. Oregano
1 t. Crushed Red Pepper
2 T. Tabasco Sauce
1 t. Coarse Ground Salt
1 T. Chili Powder
2 Eggs (Optional)
Mash beans in a medium sized bowl with masher or food processor.
Mix in all other ingredients (all are aprox. measurements).
Form patties (ours made about 5 big patties).
Grill about 3 to 4 minutes per side until cooked through.

6 Red Potatoes Washed and Wedged
Fill large cast iron skillet with oil.
Fry those taters!
